Random Rippling - Persimmon Bread Recipe

A reader wrote in asking if I forgot to include the recipe in the persimmon tree Random Rippling last issue. It hadn't occurred to me to ask for it! Now here it is!
Persimmon Bread

(Makes 4 small loaves)
Ingredients:
2 cups sugar
1 cup oil
4 eggs
2/3 cup water
2 cups persimmon pulp
3 ½ cups flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 cup chopped walnuts (black walnuts, if you can find them)
1 cup pitted dates, chopped
Instructions:
Grease and flour 4 one-pound coffee cans or small loaf pans.
Preheat oven to 350 degrees.
Mix dry ingredients.
Beat well the oil, sugar and eggs.
Stir in dry ingredients and mix well.
Fill each can or pan half full.
Bake at 350 for 1 hour.
Let cool slightly before removing from pan.
Can be frozen.
