Recipes: Then & Now - Molasses Cookies - by Douglas Carpenter

Recipes Then and Now header

Molasses Cookies

I think after so many years of writing about recipes I have enough material to muddle a few past articles into a cook book of my own. What do you think? I imagine it would be a fun and educational experience.
I am unsure at this point where I might go with it. Do I create something of local interest with the intent to sell locally or try my hand at a cook book that would have a wider audience? Do I submit it to a publisher or have it printed at a local print shop?
Some ideas I could include would be the changes in our cooking habits over the years, and how the kitchen has changed through time. I might like to use some local interviews to get some first hand knowledge of what cooks did and why. And the ingredients a cook of days past would have used and the things they didn't. Well, you get the idea.
I have set myself a goal of March first, 2011 to have a complete outline with a list of recipes and topics to include. I also plan on having completed the research necessary by then, too. Once I have all that I may need some input from you.
And you, my dear reader, are why I write. I am indebted to you for all you have shared with me. I am grateful for the joy I have found in sharing with you on a regular basis. I would like to share something more substantial and long lasting as an expression of my feelings. Please let me know what you think by sending me a message: douglas@broadripplegazette.com

So here is one of my favorite cookies. I have been baking these for at least twenty years. It is a very old fashioned cookie. Enjoy.

Molasses Cookies

1 cup packed brown sugar
¾ cup canola oil
½ cup molasses
1 large egg
2 cups all purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ginger
½ teaspoon cloves
¼ teaspoon salt

Combine brown sugar, oil, molasses and egg and beat well. Whisk together the flour, soda, spices, and salt. Gradually blend into molasses mixture. Form into balls about 1 tablespoon each. Roll in granulated sugar and place 2 inches apart on greased cookie sheet. Bake at 375° for 10 to 12 minutes.
