Even if you can't claim Irish heritage, St. Patrick's Day is so much fun to celebrate and certainly here in Broad Ripple. If you aren't interested in joining the tomfoolery at the bars that evening, why not celebrate with friends at home? Pull out your greenest table cloth and your shamrock t-shirt and give these recipes a shot. You may decide they're worthy of repeating throughout the year.


Corned Beef & Cabbage
Buy yourself a corned beef brisket at the grocery. It will come with a little packet of seasoning AND instructions. Basically, you're going to pull out your slow cooker the morning that you plan to entertain. Drop the beef in and sprinkle with the mixture of seasonings. Cover with water and turn set it on high. I let mine go all day. Your house will smell amazing and the beef will be tender and perfect that evening.
Close to serving time, I line a sheet pan with foil and fill it with small red potatoes, carrots cut into large pieces and a large head of cabbage (cored and with outer leaves removed). The key here is to make your potatoes, carrots and green cabbage chunks roughly the same size. You can certainly prepare this in the morning and stick it in the fridge until ready to roast. 30 - 45 minutes before you are ready to eat, fire up your oven. Take a ½ cup of the cooking liquid from your beef and drizzle over the veggies. Salt and pepper to taste, then gently toss them to coat. Pop them in a 400-degree oven on the lowest rack for 25 minutes. Check one of your potatoes for doneness and remove the pan or cook 5-10 minutes more if desired. Pile your veggies on a large serving platter and place the corned beef on top.
I like to serve this meal with traditional Irish soda bread. In full disclosure, I've never made it. It's always available in bakeries around mid-March and I just pick some up. I warm it up in the oven and serve it with plenty of butter.
In the spirit of the day, offer Guinness Stout and O'Douls Non-Alcoholic beers to guests.

In 1942, a young Irish chef named Joe Sheridan invented the popular dessert drink, IRISH COFFEE. Here is his original recipe with my interpretation of the preparation:

Cream: Rich as an Irish Brogue
Coffee: Strong as a Friendly Hand
Sugar: Sweet as the tongue of a Rogue
Whiskey: Smooth as the Wit of the Land


Dessert: Irish Coffee
Warm a wine goblet with very hot water. Wait two minutes then pour out the water and add a tablespoon of brown sugar and a shot of Irish Whiskey (Jameson or Tillamore Dew). Fill the glass 2/3 with freshly brewed coffee and stir to dissolve the sugar. Top your coffee with loosely-whipped cream (heavy cream that hasn't been whipped so long that it is super stiff and forms peaks). You will gently pour the cream over the back of a spoon into the coffee. Your goal is to make the coffee resemble a glass of frothy Guinness.
Pass everyone a drink and be sure to raise your glasses with a traditional Irish toast. This one's my favorite:

"May the luck of the Irish
Lead to happiest heights
And the highway you travel
Be lined with green lights.
Wherever you go and whatever you do,
May the luck of the Irish be there with you."
