THE GARDEN OF EATIN'

Miss Judy's garden is a feast for the eyes and when Mr. Bill gets his hands on her herbs....
Oops. This is a PG-13 column, so let me rewrite that thought.
Mr. Bill knows his way around the kitchen and when his culinary-blessed hands start in the garden and end serving one of his creations you want to be more than a fly on a poppy watching it all happen. You want to be napkin-lapped and seated at the Garden Grove dinner table, especially if Mr. Bill plucked wild arugula. He uses that zippy, earthy lettuce to create a dish that just might be better than..........

Penne with wilted Arugula, Radicchio and Smoked Mozzarella

1 lb. Dried penne pasta
5 T extra virgin olive oil
1 t finely grated fresh lemon zest(about one lemon's worth)
4 garlic cloves, minced
1 (3 oz) head radicchio lettuce (may substitute red cabbage. I do.)
9 oz arugula, trimmed and roughly cut (6 cups)
1 cup fresh basil (rolled from stem to top then thin sliced)
4 oz. smoked mozzarella, cut into ½ inch dice
2 T fresh lemon juice (the one lemon will suffice)

Cook pasta in a 6-quart pot of well-salted boiling water until al dente.
While pasta is cooking, whisk together oil, zest, garlic, salt and pepper to taste in a large bowl (the dressing). Then thinly slice radicchio (or red cabbage), arugula and basil and add to dressing. MODIFICATION: Prepare this step earlier for more flavor infusion - an hour earlier does wonders.
Reserve ½ cup of cooking water and drain pasta in a colander. Add hot pasta and reserved cooking water to greens and let stand one minute to wilt.
Add mozzarella and lemon juice and toss well. Season with salt and pepper and serve warm.

SUNFLOWER SELECTION

When it comes to beer I'm best suggesting pet names for beers and labels. After all, my doggyboyz Guinness and Harp are aptly named. Both are black and tan and adopted on St Patrick's Day 1998 from the Indianapolis Humane Society.
( A "black and tan" is a blend of Harp and Guinness. Pour the lager first, then the ale and watch it mix like a tequila sunrise. But that's another drink and another column...)
My love for wine and sensitivity to malted barley means I don't drink beer these days. So these selections come from the beer belle Maggie who offered her primo summer quaffing list. And next to hers I listed my pet naming list. Why? Why not! It's summer-- have fun.
And you wondered why I get paid the big bucks to write this column..... hee hee hee.. Enjoy!
Oberon - is the fruity, spicy beer to drink. A big dog or Persian cat or ferret deserve an equally regal title.
Weinhenstephaner Hefe Weiss - A small yippy dog that means business hence the long name. As for the tag on the dog that's easy: WWWHWD. What would Weinhenstephaner Hefe Weiss do??
Pauvel Kwak - A bulldog or terrier that drools. Webbed feet optional.
Tripll Karmeliet - Dog or cat boasting coat with three of these colors: caramel brown, dark butterscotch, chocolate brown, cinnamon, or nutmeg colored markings.
